Esther Mensah works as the Registrar at Palm University College. Ms. Mensah received her Bachelor of Arts Degree in English from Central University and her Master’s Degree in Public Relations from the Ghana Institute of Journalism. She completed her national service at Central University as an Administrative Assistant.
Ms. Mensah has experience as a Customer Service Agent, Sales & Marketing Manager, Research & Development Manager, Sales Supervisor, Personal Assistant and a Registrar within banking, fashion, education and in the private sector.
She served as a facilitator for the Campaign for Female Education (CAMFED) for their Tertiary Scholars Congress Program in December 2020, Head-Start Orientation for Tertiary Scholars in July & September 2019 and the Training for Peer Mentors and Core Trainers on Effective Mentoring in September 2018.
Ms. Mensah has engaged in various volunteer opportunities. She spent time volunteering at Liddle Lyceum School, in Dar Es Salaam, Tanzania and in the Vision & Legacy Unit at Central University. She has also been the Organizer/Moderator of the Noble Women’s Meeting.
Beth holds a bachelor’s degree in Social Work from Pacific Lutheran University (1996) and a master’s degree in Social Work from Walla Walla University (2001). She was awarded the Graduate Dean’s Scholastic Achievement Award upon graduation from her MSW. Beth has been working in the area of social work for more than 24 years. She spent 12 years working in social work in the United States.

Meet Mensimah Esi Acquah, a seasoned educator with over ten years of classroom teaching and administration in tertiary education; she is currently working as the Career Services Officer at Palm University College. Mensimah firmly believes that “Education is the most powerful weapon which you can use to change the world.”
Her ability to interact with learners outside of the classroom has been honed via her mentoring of students in a variety of extracurricular activities. Mensimah is committed to helping students in her new position navigate their academic journey, considering potential job pathways, and acquire critical life skills. She wants to build a network of support that helps students succeed academically, personally, and professionally by taking a student-centered approach.
Mensimah is dedicated to continuing her professional growth, which keeps her at the forefront of best practices in student affairs and career services. She received her Master of Arts in Public Affairs from the University of Ghana. She has the knowledge and expertise to significantly improve every Palmer’s life and provide them the tools they need to thrive in a world that is changing all the time.”
Catherine Boafo Ashong is a seasoned Career Counselor with a focus on the Non-profit, Social Enterprise, and Education sectors in Ghana and the USA.
She holds a Bachelor’s in HRM and an HND in Marketing, and has studied at prestigious institutions like Achimota School, Accra Technical University, and Heritage Christian University College.
With a wealth of experience in facilitation, public speaking, and youth counseling, Catherine is a visionary leader who empowers individuals, particularly women and youth.
Her dedication, reliability, and strong communication, research, and data analysis skills make her an invaluable asset.
Daniel Dobre is the Information Technology (IT) Officer at Palm University. He is responsible for the management and implementation of technology systems through planning and maintenance of information technology systems, infrastructure and services at the University. He is in-charge of all information technology infrastructure at Palm. He thinks strategically, makes informed decisions and solves the university’s information technology problems.
Daniel holds a Bachelor of Science degree in Information Systems Sciences from Regent University and a Diploma in Public Finance & Accountancy (DPFA) from Institute of Accountancy Training (Ministry of Finance)
Daniel worked as a web developer/server manager at Arise Graphic Professionals and a Mobile Registration Workstation Operator (MRWO) at National Identification Authority (NIA). He also worked as a remote web developer at DoWell Research India.
Sarah Osei Berko is the Assistant Student Life and Career Services Officer at Palm University. She is responsible for overseeing community service and volunteering activities, coordinating student life, and reporting to the Student Life and Career Services Coordinator. Sarah supports student activities and events that benefit the student community. She completed her first degree in Political Science and Information Studies at the University of Ghana and served at the Parliament of Ghana for her National Service. She also interned at the Center for Scientific Industrial Research (CSIR) and previously worked at Lollybet company as a call center agent before becoming a manager. Sarah has volunteered as a teacher for two years, teaching children at Kingdom Life Ministry her church,  and the Darkuman community where she used to reside.
Emmanuella Mawuse Donani is a dedicated Officer at the Palm Centre for Ethical Leadership. In this role, she plays a key part in organizing and planning a variety of leadership programs. Her responsibilities also include conducting research and building collaborations with external organizations, community leaders, and alumni.
Emmanuella holds a Bachelor of Arts in Sociology and is currently pursuing a Master of Philosophy in Sociology from Kwame Nkrumah University of Science and Technology. With a strong background in research and administration within the academic sector, Emmanuella is passionate about applying her sociological insights to real-world challenges. She is committed to advancing the mission and vision of the Palm Centre for Ethical Leadership.
Seraphine Ofori Ndinya is a dedicated real estate professional with a strong focus on facilities management. With a degree from Kwame Nkrumah University of Science and Technology and ongoing professional development through the Ghana Institute of Surveyors, she brings a solid foundation to her role.
Possessing over three years of experience at the Lands Commission, Seraphine has honed her skills in property management, maintenance, and administration. Her expertise in facility operations, budgeting, and customer relationship management make her a valuable asset to any organization seeking to optimize its real estate portfolio.
Proficient in property management software (QGIS, Buildium) and data analysis tools (Microsoft Office Suite), Seraphine is committed to leveraging technology for efficient operations. Her goal is to create safe, comfortable, and sustainable spaces that meet the needs of occupants.
Mr. Appenteng, the Assistant Finance Officer has ten years of professional experience in accounting.
Mr. Appenteng worked as the Accounts Officer at Palmers Green International Limited in Kaneshie, Accra from 2013 to 2016 (3 years) and at Geodomi Concrete Products Limited in Dodowa from 2017 to 2023 (7 years).
He holds a Higher National Diploma (HND) in Accounting from Ho Polytechnic, obtained in 2012. Additionally, he earned a certificate in Tally ERP9 Accounting software (Forex, Budget, Transactions, Financial Report Generation, Tally Backup, Export of tally to other format, and Bank Reconciliation) in April 2018.
